Cha Cha Chai

In a conscious effort to try and stay as healthy as possible, I wanted to experiment with this Chia Seed I've been hearing so much about. Another super food that has been added to the list, which is a great source of fibre and packed with antioxidant (aka natures botox because it is anti aging). Despite their tiny size, they are one of the most nutritious foods on the planet.

Making the porridge is easy, but it does take some prep.  I soaked the chia seeds over night in a can of coconut milk and kept it in the fridge. The coconut milk breaks down the seed so it expands and swells to form a rice-pudding like mixture.  I used way too many seeds (50grams) for I can of coconut milk and had to add hot water to it in order to make the consistency more smooth.  I would suggest a 1/3 ratio of seed verses fluid. To give you an idea, they can absorb 10-12 their size in water.

When you are ready to serve, simply heat the mixture up on the stove and add some almonds and flaxseeds for extra protein and fibre.  Adding honey is a sweet idea too.

I found the cheapest place to buy Chia Seeds was in the Organic super market (surprisingly) in Tecom at 25dhs for 100grams, but I have also seen it in Spinnys and Carrefour for about 30-35dhs.
